Invented today in my gluten free kitchen because I needed something that packed a nutritional punch, gave me needed proteins and fats and that would travel well for an upcoming camping/hiking trip!
Nutty Tropical Protein Balls
makes 10 servings of 4 balls each
Ingredients:
1 1/2 C. Natural Peanut Butter
1/2 C. Cashew or almond butter
4 TB Agave Nectar or Honey
1/2 C almond meal
1 C "Banana Scream" Whey protein Powder (or any banana protein powder of your choice**)
1 C Tofutti Better than Cream Cheese (or regular Cream cheese- I am dairy free)
1/2 C macadamia nut, chopped into pieces (or any nut you prefer)
1/4 C all natural unsweetened unprocessed shredded coconut (fancy fine shred)
Directions:
Mix all ingredients together until the mixture packs well
Roll dough into 2 TB or 1 oz balls, a small cookie scoop works well for this part
Roll formed balls into extra coconut (or chocolate powder) so they don't stick to each other
Store in the fridge if you are holding onto them for any length of time otherwise enjoy as needed
**If you don't have or like banana protein powder use unflavored and pick your own extract to add the needed flavor just pick something tropical or that would compliment nuts like chocolate protein powder.
