OK, so I admit it… if you have not already figured it out… I LOVE TO COOK!
Yes I am a food network junkie, I love hosting events, I love potlucks, I love to experiment with food, and I'm addicted to creating wonderful food!
So I recently joined this great LJ Community called Hot Chicks Cooking (
hot_chicks_cook) and I have already shared two recipes and downloaded and tried one! Of course it helps that I already had most of the ingredients on hand, I've been craving some autumnal baked goods, and the woman who posted the recipe is a friend IRL! *giggles*
So I borrowed
solcita's
recipe and then tweaked it to suit my own diet. Basically, all I did was substitute egg beaters for real eggs, Splenda for the sugar, added 1/8 tsp of Pumpkin Pie Spice, used dried cranberries instead of frozen/fresh, and I added a handful of chopped nuts for some added protein. (I also baked it in my mini-loaf pan instead of a standard loaf pan so I had to cut the bake time down.)
The final product is just mouth-watering, the smell from baking is still lingering in the air, and they just look darn pretty too! *sigh* It officially feels like autumn... the cool breeze is blowing through my kitchen and I have fresh baked pumpkin bread in my cake keeper! w00t! I am one happy cook!
