Thought I'd share my winning recipe from this year's feast....
Watermelon, haloumi and bread salad (from this month's Gourmet Traveller)
Some nice Turkish bread - brush with nice olive oil and char, oven cook or lightly fry. Just get it nicely crusty.
A couple of packets of haloumi - slice into pieces and coat in flour, fry off in olive oil and put aside.
Seedless watermelon - ball it, or cut it into nice size batons that go with the haloumi pieces.
Red onion, finely slices and soaked in a slosh of red wine vinegar and a hefty slosh of good olive oil.
Chop up some fresh mint and basil and chuck that in too.
Tear the bread up, mix it all up together.
Thoroughly enjoyable when eaten as a whole. It all goes together beautifully.
