Vegetarian Black Bean Soup

Another easy (and vegetarian) recipe that is effing AWESOME. Even better the second day. :)

Prep time: 5 + 5 minutes
Cook time: 20 minutes
Makes: 4 servings

1 cup of salsa
2 cans of black beans
2 cups of broth (chicken or vegetable)
Onions, cilantro and soup cream for garnishing (optional)
Jalapenos (IF YOU DARE)

(1) Heat the 1 cup of salsa and whatever jalapenos you want in a pan for 5 minutes on medium heat. While it's cooking, open the 2 cans of black beans and drain/rinse them.
(2) Add the 2 cups of broth and the washed beans. Simmer on medium heat, covered, for 15 minutes.
(3) Let cool a bit, then take about half of the soup and put it in a food processor. Get it all processed, return it to the pot, and mix well.

Serve warm with sour cream, onions and cilantro (optional). I added extra jalapenos to the left overs and it was AWESOME.
