Okay, it's not really a tart, but it is my NEW FAVORITE FOOD, and so very diet-conscious and easy!
You will need:
grape tomatoes
butter-flavor Pam
salt
dried oregano
panko (other breadcrumbs would probably be fine, too)
Basically, you can make this as little or as big as you like: I've made anywhere from one tiny ramekin to a big Corningware casserole. It's flexible, great hot or cold, and I bet kids -- all kids like pizza, right? -- might like it, too.
1. Preheat oven to 375 degrees. (Or 350 to cook longer, or 400 to cook shorter -- this has proved pretty forgiving so far when I want to cook more than one thing at once.)
2. Spray the bakeware with the Pam (or any other cooking spray). I actually like to use olive oil spray for the bottom and Pam for the top, but you really only need one.
3. Rinse the grape (or other small) tomatoes, slice lengthwise, and lay cut-side up to cover the bottom of the bakeware in a single layer. Sprinkle with salt & oregano. Lay out another layer. Salt & oregano. Lay out a third layer if you like, then salt & oregano that.
4. Sprinkle panko over the topmost layer. Spray top with butter-flavored Pam.
5. Bake! Depending on the size/depth/temperature, cooking times will vary, but I like to cook until the bottom is dark (some black is okay, in my book! It tastes all caramelized and yummy!) and the top looks golden & crunchy. Probably an hour is an okay ballpark guess for a 375 oven?
