How to Make Cream Puff

Many people have asked me how to make the cream puff, so here it is. I didn’t convert most of the units cause I use Japanese cooking wares - the easiest way to convert is to use Google: type “60 gram in oz” or something and it’ll give you whatever the unit you use often. (lol, I don’t even know whats the popular weight unit…)

I usually make cream first, so that it will have some time to cool down. It takes about ~30 mins for cream, and 1~1.5 hours for the puff.

Egg - 1
Milk - 250 cc
Sugar - 60 grams
Flour - 30 grams
Butter - 1 spoon
Vanilla extract/essence - a bit, maybe 1 teaspoon?
Rum - a bit, maybe 1 teaspoon?

1) Beat the egg in bowl A.
2) Add sugar and flour to bowl A and mix well with whisk.
3) Pour milk into the pot and boil it.
4) When milk boils, pour it into bowl A and mix well.
5) Use strainer to filter whatever inside bowl A, into a pot.
6) Put it on stove - medium/high heat, and continue stir with wooden spatula until it thickens.
7) When it thickens, remove it from the stove, and put butter, vanilla essence, and rum in it.
8) Use whisk to mix until it becomes creamy. The more you mix, more smooth it will be.
9) Cover it (so it won’t get dry) and let it cool down.

Flour - 50 grams
Egg - 2.5~3, depends on the size of the egg
Butter - 50 grams
Milk - 35 grams
Water - 35 grams

1) Beat the egg and leave it in room temperature. Spread aluminum foil in the tray.
2) Put butter, milk, and water in the pot, and stir it until it boils. Remove it from stove.
3) Add flour into the pot, and mix well.
4) Put it onto the oven again and mix well until you see a thin layer at the bottom of the pot.
5) Add egg little by little, and mix it with wooden or silicon spatula. It’s easier to mix with whisk first, then change to spatula. Try to scoop the dough and let it drip - when you see triangle shape on the spatula about after 3 secs, then it’s enough. (-> See the picture in here, step 7.
6) Put them into the pastry bag, and squeeze out onto the tray, about 1.5 inch diameter.
7) Bake it for 25~30 minutes in 374 F oven. DO NOT OPEN THE OVEN otherwise it will deflate.
8) When it’s ready, cut the top part and put cream in it.
