Cooking help?

We are going on this family vacation in a few weeks, and my mother thinks it would be nice if we each took a turn cooking dinner.  I do not cook.  BF does not cook, much.  And, when we do cook it is for 2, not 12.

Anyone have an easy dinner for 12 made with ingredients that I can legally take over the Canadian border or purchase at a local supermarket?  I'm worried the store won't have much of my usual stuff, tofu, fake meats, organic produce, etc.  We are: 4 vegetarians, 1 vegan, 3 who eat fish and chicken but no red meat, 1 who loves meat and if we use the fake meat we will have to bury it (so veggie burgers are out) and 3 unknown.  And 1 nut allergy (she's one of the chicken/fish people).  Don't know what I'll have for supplies, but assume a standard kitchen with pots, pans, oven, range, possibly microwave, maybe grill.

Thinking of things where people can make their own, like tacos, so the vegan can stay away from the cheese, the black olive hater can stay away from black olives, etc.  Pizza, they can top their own?  Might be fun?  With a salad?
