Thanks to

cmr_stories I have started making Bento-styled lunches to take to work. I found a beautiful box online with three layers (although I tend to only use two for work). I fill one layer with assorted fruit. Today, grapes, pineapple pieces, 4 blackberries and 4 strawberries are ready for snacking. In the other layer I have a chopped hard boiled egg, fresh broccoli, 2 rounds of babybel cheese and a little bowl of couscous. I also have four Kashi Mediterranean Bruchetta crackers to add to the cheese and fruit for a mid afternoon snack.
Low-carb, low sodium and low calorie. I enjoy it and it fills me up. The only slight problem is that because I'm trying to do the very healthy thing of eating small amounts throughout the day, I am usually ravenous by the time I leave work. I have to work hard not to overindulge at dinner time and when I cook for Clay and my sister Phylicia, I tend to make less healthy things than I should. And I love having dessert with Phylicia. It's fun to get hang out time with my sister over ice cream or what not when we have missed out on so many years because I was in Texas or Oklahoma.
Evenings will be tricky but if I can keep up the good daytime eating, I hope to improve my willpower for the rest of the day.
