My most consistent success in cooking yet

Made another really good chili tonight. And this time I have pictures! And I even figured out how to make them not so embarrassingly huge!

Also, fiiiiiinally remembered to use the souvenir bowl from all the way back when I went to the Rally to Restore Sanity with visiblemarket and englishmuffin2 and we ate at Ben's Chili Bowl. It's tough to see the logo (maybe embarrassingly big was the way to go for these that's what she said), but it's there.

Anyway, recipe.

INGREDIENTS

approx. 1 pound of ground beef
1/2 of an onion
1 can of diced tomatoes
1 can of tomato paste
1 package of chili seasonings mix (I like McCormick)
3-4 cups of water
(optional: 1 can of other veggies like corn and/or beans)

DIRECTIONS

1. Chop up the onion and cook it with the ground beef in a pan.

2. While the meat and onion simmer, put the water in a big pot and boil it.

3. When the water's boiling and the meat's brown (or close to it), dump the diced tomatoes, tomato paste, chili mix, meat and onions (optional: and other veggies) into the pot.

4. Turn the heat down so it's all kind of bubbling and let it sit for.. well, I'd say at least half an hour, it really depends how much liquid is in it once you've dumped everything in and how much you want to boil off. If it looks like there's too much liquid, just let it boil a while longer.

5. Oh jeez, almost forgot- put chili in a bowl, and add crumbled crackers and grated cheese. THIS MEAL IS NOTHING WITHOUT THOSE TWO ITEMS.

Makes... a bunch, I dunno. I make this when I need something to eat for most of a week. It's super good, and is also one of those meals that gets better with time as all the flavors sink together. I'm going back for another bowl. :D
