There have been enough times I've thought I should have a blog, again, in the last couple of months. Trying livejournal this time around....
Pasta e Escarole (4 servings, about 30 minutes)
bastardized from the grocery store produce guy's instructions
4 T olive oil
6 cloves garlic, chopped
1/2 onion, sliced
crushed red pepper to taste
1 cup elbow macaroni
1 head escarole
1 can white beans
2 cups pasta sauce
salt & pepper
dash of honey
Cook pasta per instructions. Meanwhile, bring 3" of water to a boil in a large pot/dutch oven. Wash escarole, and tear into smaller pieces, removing inner stalks. Boil escarole for 3 minutes, drain, rinse and squeeze out excess liquid (squeeze well, or it will be bitter). In same pot, add olive oil, onions, garlic and red pepper. Saute for a few minutes, until things start to get fragrant. Add the escarole (and more oil, if necessary). Cook for a minute or two. Add the beans and saute for another minute. Add cooked macaroni and pasta sauce and heat through. Taste. Add salt & pepper and honey as necessary (my tomato sauce was bitter, hence the honey).
This would have been good with the addition of zucchini and/or corn, even if neither is in season.
