avoiding shampoo

I have fairly fine, straightish hair to my waist or thereabouts,  that I only wash about once a week; always had it drummed into me that letting the natural oils appear in the hair before washing it, was good for it. I get chronic itchy flaky scalp that appears guaranteed a day after using any commercial shampoo.

I was searching through the community looking for more entries on avoiding shampoo; I got there quicker by searching lj overall. (Have tagged this entry for future searches).

I have tried some alternate methods -

If I use sorbolene (glycerine based soap alternative) the scalp stays pretty good for a month at a time, but the hair is lank and oily looking.

I tried the conditioner only method mentioned on this list, but found that the scalp was cleaning up all right but I was left with oiliness in the hair at the back of the head and neck.

For a while I tried sorbolene on the scalp, then washed with commercial shampoo so my hair looked silky again. Got tired of this, want one stop shop. I'm going to try the soda/vinegar approach, but have a couple of questions -

- Why the vinegar on the ends? What does it do?
- What did your grandmother use? Mine had very long hair and used to wash it in the kitchen sink - but I can't remember what with.
- Any other ideas?
