So, I baked the bread. This time, I left the dough to rise three times, and one of them was overnight in the fridge (longer rising times are meant to help develop the flavours more). The other risings were in the oven with a bowl of boiled water next to it, to keep it warm and humid.

It's a very nice bread - I tend to prefer working with dough that's firm, and I always enjoy braiding things. :D
