Ooh honey honey

So, I baked the bread. This time, I left the dough to rise three times, and one of them was overnight in the fridge (longer rising times are meant to help develop the flavours more). The other risings were in the oven with a bowl of boiled water next to it, to keep it warm and humid.

I also brushed the surface with two coats of egg wash (for a better coat).



The dough itself was much better to work with, with lots of bubbles under the surface of the skin. Possibly too many bubbles as you can still see them after baking, but I'm happy my dough did not seem too dry this time.

In other news I feel rubbishy. Don't know if going for a run will make me feel better or worse.
