Last week was a bit special. It was spring break and many of my students who have got kids went away on skiing trips so I had fewer lessons that week. I used to the time to go the gym, write my February articles and even relax a bit. Ideal week. :)
I also finally had some more inspiration for my breakfasts. This time of the year, though, I usually prepare and eat my breakfasts when it's dark outside, which makes it tricky to take good photos of them.
Breakfast idea #1: parfaits.
Parfait #1: raspberry & chocolate
I've been craving chocolatey things lately so I thought I'd incorporate that to my breakfast.
For 4 portions you will need:
powdered cocoa, 1 tbsp (though you can always add more if you so fancy)
oats, 8 tbsp
chia seeds, 8 tbsp
a banana
walnuts, about a handful
vanilla extract, 1 tsp
white yoghurt, 4 tbsp
almond milk, 1 cup (add more if you prefer your chia pudding more runny)
peanut butter, 1 tbsp
raspberries
First, I made the chia pudding by mixing chia seeds, almond milk, peanut butter and banana together.
Hopefully you can tell from the photo that the consistence is now quite puddingy.
I put the chia pudding on the bottom, then I added a layer of oats, raspberries and white yoghurt.
Top with walnuts, more fruit and anything else you like.
Parfait #2: apple crumble
For 4 portions you'll need:
apples, 4
cinnamon, to taste
honey, 1 tbsp (optional)
chia seeds, 4 tbsp
banana
oats, 8 tbsp
almond milk (or any other milk you prefer)
Chop up the apples.
Add a generous amount of cinnamon and, if required, a tsp honey. It really depends on how sweet your apples are. And then pop it into the micro for about 30 - 60 seconds so the apples get all soft.
Mix half of the apples with the chia pudding and 1 banana (to sweeten it all AND to make it a bit thicker); then mix the other half with some oats. Layer as desired.
And here are the finished parfaits. I really couldn't tell you which one I enjoyed more.
Breakfast idea #2: peanut butter & raspberry bread
The original recipe was this
Raspberry, chocolate & hazelnut breakfast bread. I switched the Nutella for peanut butter. I haven't had Nutella for years. I remember it tasting good but it's the ingredients put me off. I have, however, seen some recipes for a home-made Nutella on Pinterest (I seem to recall one made with avocado) so that would obviously work much better than the one you can buy, which is full of unhealthy fats and sugar.
I did love it with peanut butter, though, so if you're a fan as well, just switch Nutella for peanut butter and you're good. It really IS bread, though, not a dessert, so bear that in mind when you make it.
I loved to take mine with salted butter and some cheese but it was really delicious with jam, too.
