Last night it was a "Nigella-Fest" ! I cooked dinner for our friends and neighbours, the lovely Lynne, Miranda, Bobby, and the lovely Paul (from north London - but we don't hold that against him !! LOL). The menu planning started off with dessert first, as we'd watched Nigella on TV making "her" No-fuss Fruit Tart and decided on trying it out - picture to follow !
Two of our guests are vegetarian so it was a meat-less feast..... Franco's mother had sent him back to the UK recently with (amongst a mountain of comestibles) home-grown aubergines so I tried out the recipe for "Involtini" from the "Feast" cookbook.... strips of aubergine with a stuffing of feta, mozzarella and parmesan cheeses with pine nuts and raisins and topped with tomato passata and (more) mozzarella. To follow I made Vegetarian Chilli with Cornbread Topping (my first attempt at this topping), also from "Feast", with a side of green beans.
It was compliments all round - thanks Nigella, though I did feel the size of a house afterwards !
