Hi All!
I felt pretty good day yesterday. I cleaned my fish tank but then realized I needed a new charcoal sponge thing for the filter--Went to the aquarium store and while I was there I couldn't resist getting a couple more colorful guppies. These two are called Sunset Bronze or something like that. They are a bright orange, then transition to a pretty bronze blue color. Whenever I add new fish to my tank the other guppies torture the new ones by chasing them all around the tank. I feel bad...but eventually they all get along so now I just throw them in and don't watch. ;)
Here's a funny picture I took of Noodle. One minute she was fine...then the next min. her EXTRA long tail was stuck to the tape in the tape dispenser. She kept wiggling it up and down...it looked like a snake!
I bought a bunch of ingredients to make cookies this weekend so that's on my sca-dulee, but while I am thinking about food things I thought I would share a recipe that my friend Di told me about. It is from the Cooking Light Website.
So here you go!
Spaghetti Pie
Though it's really a deep-dish casserole, many Midwesterners lovingly refer to this recipe as Spaghetti Pie. You can substitute plain tomato sauce and add 1/4 teaspoon of garlic powder, if desired.
1 pound ground round
1/4 teaspoon salt
1/4 teaspoon black pepper
2 (8-ounce) cans tomato sauce with garlic
1 1/2 cups low-fat sour cream
1/2 cup chopped green onions
1/4 cup (2 ounces) 1/3-less-fat cream cheese, softened
4 cups hot cooked spaghetti (about 8 ounces uncooked pasta)
Cooking spray
1 1/3 cups (about 5 ounces) shredded reduced-fat extra-sharp cheddar cheese
Yield: 6 servings
NOTE: I added more meat (1/2lb) to my recipe, but forgot to add more tom. sauce. So if you increase the meat-increase the liquid or it will come out kinda dry like mine did :(
1.) Cook meat in a large nonstick skillet over medium heat until browned, stirring to crumble. Drain well, and return meat to pan. Stir in salt, pepper, and tomato sauce. Bring to a boil; reduce heat, and simmer for 20 minutes.
2.) Cook the pasta.
3.) Combine the sour cream, green onions, and cream cheese in a small bowl, and set aside.
4.) Place the spaghetti noodles in a 2-quart casserole dish coated with cooking spray. Spread the sour cream mixture over spaghetti noodles. Top with meat mixture.
5.) Sprinkle with cheddar cheese. Cover and bake at 350° for 25 minutes. Uncover; bake an additional 5 minutes or until cheese is bubbly.
Okay ok...I know that last picture didn't come out looking very appetizing did it? --frankly it looks like a pile of poo lol! Oh well, it tastes good ((no really!))
I really loved the taste of the cream cheese and green onions in this dish and I also thought it tasted better warmed up the next day :)
