Good quick cold day lunch
1 package ramen noodles & seasoning packet (I used chicken)
4 oz. firm tofu, cubed
1 c. any frozen vegetable (I used left over frozen asparagus)
1 green onion, chopped
couple drops of Chili oil (to taste)
Add everything to a big bowl (I used a 4 c. pyrex measuring cup. I love cooking in them). Cover with boiling water and let sit covered for 5 minutes. Yum!
