I'm on the mission truly, my head buzzing and going rounds with 1 trillion ideas. One of my missions is planting trees, as much as possible. My favorite now is Bael tree (Aegle marmelos). We absolutely fell in love with ice tea from the ripe pulp of this fruit, which I discovered accidentally. Normally Thai people dry the pulp before it gets too ripe and use it for tea. I discovered that ripe pulp sun-dried, then boiled for about 7-10 minutes and refrigerated - makes an awesome ice tea. Teep says he told me about it before, but I can't recall it. Bael season is over now, and we have nothing left, during 1,5 month we consumed all we had by drinking ice tea prepared from the infusion, some honey, cinnamon, nutmeg powder and lime juice added. We searched and searched all around our village, and we found 3 huge trees, all surrounded by long fallen old rotten fruits. Unfortunately,I discovered this gem too late this season. No one wants it. I cant believe that. So now we have found a place with 2 huge Bael trees full of young shoots around them. So far we took over 5-6 f them, more coming. Planting trees is strange, I must admit. You don't know how many years ahead before you can actually taste their fruits. I'm not sure how many will survive, as ordinary folk (villagers) here, unfortunately, but frankly, are quite ignorant of herbs and their power, and like to cut all treas and plants on their way, and even out of their way too. NEVER MIND THAT. Here, in Thailand, with the heat and rainy season and then dry hot season, I have discovered and experienced for myself, what is the climate change due to deforestation. One big tree makes it cooler all around it in a few meters radius, it's home to many animals and insects that live in it, on it, all around it, then it produces the fertile soil underneath. Whenever I plant something now, I go around our place and take some soft black soil from underneath the trees, otherwise it's just hard clay, that makes it hard for any vegetables or flowers to survive in it. Then the type of soil affects how the water from the rainy season is absorbed, and then it again affects the climate. I'm no professional scientist studying the climate change, but from my simple everyday life I see the difference TREE/NO TREE for myself. That's why I'm trying to spend no day without planting at least a tree or two.

Bael ripe pulp - perfect for sun-drying and preparing ice tea


Boil the pieces of sun-dried bael fruit pulp, add some cinnamon and nutmeg powder, boil for 7-10 min, let it cool down considerably, add some honey nd lime juice, refrigerate, great with ice cubes, delicious and healthy soft drink.
