Hey Lionus, wonderful piece, loved it :-) As to your question I listened thrice to each one and I felt the first one was better and the reason I say that I think it is because the flute playing in it I feel matches the better with the other 2 movements as it is not as stark a change between the first and second movement to the 3rd. I think the flute maintains the happy frilly tempo so go with that if that is the goal of the piece. At the same time I think it sorta plateaus your piece because it establishes the general flow of the music and thus other movements further into the piece may end up stagnated
However as to the violin sound, I think that option provides you more room to expiriment within your piece as it opens up a wider variety of notes by bringing in a new musical instrument and I think in a later movement may allow you to easily bring in something with a deeper sound like a tuba wheras I do not think the flute would allow that luxury as well.
