And this is what I did over the weekend

Over the weekend, I really wanted some pizza but I didn’t want to 1) order from a restaurant - too salty and too pricey or 2) make one from scratch - sue me, I was feeling lazy. So while I was exercising (I know right) I had a bright idea. I remembered I had some leftover garlic toast that I had been hoarding in my freezer for months. You can imagine the rest. I made garlic toast pizza. Interesting, right? Okay, so maybe not. But here’s the ‘recipe’ anyway.

Garlic Toast Pizza

• Two slices of Texas garlic toast
• Italian seasoning (optional)
• Pizza sauce
• Two slices of mozzarella cheese
• Pepperoni
• Bell peppers

While pre-heating your oven to 375, pre-bake your garlic toast. Once the oven has finished preheating, take out your garlic toast and check the bottom for brownness. Spread pizza sauce on top of toast and sprinkle a bit of Italian seasoning on top of sauce, smoothing the seasoning into the sauce with the back of a spoon (to prevent dry spots). Place 4 slices of pepperoni on each piece of toast. Layer bell peppers on top of pepperoni. Put one slice of mozzarella on top of each piece of toast and place back in oven. Let cook for 10 minutes or until edges of cheese has turned brown.

It was actually really tasty and my favorite part was that they were perfect portion sizes. Of course you don’t have to follow what I did to a tee. Whip it up how you like it. I just like the idea of it because let's face it, you don't always feel like kneading dough.

As for the ingredients, I like to make homemade pizza so I usually have ingredients on hand. The Italian seasoning and the pizza sauce were both homemade and highly simple to make. Pizza sauce takes about 15 minutes to make and recipes are a dime a dozen. Try one. FYI, if you do make pizza sauce or any other tomato-based sauce, remember to add in a pinch of sugar (white or brown). It neutralizes the acidity of the tomatoes. Not all recipes specify so it's important to keep that tip in mind.
