The Way of Kings and a nice bright light-therapy box! Now I can be less psychotic in the winter! My husband is awesome. So awesome.
We're trying a Tofurky roast this year, with veggies and a delicious olive oil/soy sauce/sage baste. I'll say one thing: the cleanup is easy! The roast is still in the oven, so I'll report on it more later. Along with that I've made parmesan garlic rolls and chocolate-cherry-almond clusters.
While we wait for the roast to cook, we're watching The Two Towers (watched Fellowship last night) and drinking Cranberry Cheer wine from Lowcountry Winery. As I mentioned on Facebook, it's like cranberry juice that kicks your ass. The website seems to be down now, but I'll post a link when/if it comes back up.
Here are some recipes:
Parmesan Garlic Rolls
1 package Pepperidge Farms Club Rolls (if you can find them. They work best, but if you must, you can substitute any dense dinner rolls.)
1 stick butter, melted
1/2 cup grated parmesan cheese
1 to 1.5 tsp garlic powder, depending on your taste
Cut the rolls in half longways. Mix the parmesan and garlic powder together in a small bowl. Put the melted butter in another small bowl.
Dip the cut side of each half-roll in the butter, then in the garlic/parmesan mixture. Refrigerate for three hours, then put under the broiler until very light brown.
Chocolate-cherry-almond clusters
12 oz. semisweet chocolate chips
1 cup sliced (or crushed) almonds
1 cup dried cherries
Melt the chocolate chips in a saucepan over low heat.
Stir in almonds and dried cherries.
Drop by spoonfuls onto wax paper.
Refrigerate until solid.
