Last night was a pork experiment.
The recipe called for a pork loin or other roast. I had chops -- and thin ones at that. It also called for prunes which is not something I just have sitting around the house. I did have raisins, and I figured that one dried fruit is much like any other.
In brief, I took eight thin chops (a slightly thicker cut would probably have worked better), browned them in a heavy dutch oven, and then set them aside. I sauted two medium onions in the pork drippings plus a bit of olive oil. Add a cup and a half of chicken broth, the raisins (about a cups worth) and a cinnamon stick. The recipe stops at that, but I sprinkled some powered cinnamon in as well since I wasn't going to be cooking the dish for nearly as long as called for. Put the pork back in, cover and cook until done -- about 10 minutes in my case. Add 2 tablespoonfuls of honey, simmer for 2 or 3 minutes and then take out the pork. Squeeze in one lemon and cook until the liquid is reduced to about half. (

I put everything over couscous and served it with cabbage cooked with cinnamon and coriander. The recipe suggested rice and carrots as sides, and I think that would also work really well. Sweet potatoes would be tasty too.
