So I am playing around with things for me to eat that I can make a batch of it, and then eat it for lunch or dinner for the next few days to make it easy on myself and not have to cook everyday.
This past week I made some pasta and sauce Easy enough right?

This is the sauce I chose to use. We had a can of it in our pantry for a while. It was purchased by mistake as Chris and I always buy the marinara sauce. Well it can move on over because this is now my new fav sauce!

Veggies
1 can of Del Monte Mixed vegetables. Which I believe had corn, peas, green beans, lima beans.
1 can of Del Monte diced tomatoes with oregano and garlic.
1/4 cup of fresh cut Red Onion.
(wanted to put fresh garlic in but I was fresh out of cloves)

Made entire box of pasta, as per directions. Salted the water after pasta went in, and added about a tsp of olive oil to the water as I always have problems with it sticking. I also cook it a little bit extra as I tend to find whole wheat pasta a little chewy? So I like to "overcook" it a tiny bit to make it more soft. This is up to the person. =D
I put 2 tbs of Extra virgin olive oil in a saute pan. Heated it for 1 min, tossed in my can of tomatoes, and onion. Cooked about 5 min until everything was soft. Added my can of veggies, added about a tsp of garlic powder, and about 2 big spoonfuls of oregano. (yum!) Cooked this about 10 to 15 min. About as long as it took for the water in my big pot to start boiling.
When my pasta got put into the water to cook, I added the can of sauce and covered it, turned down the eat to about med low. Or Low "high" lol Just enough to make it bubble without splattering all over. Stirring occasionally. I took it like this til my pasta was done, ready and drained.
Then I plated my pasta and put sauce on it. And sprinkled some whole milk mozzarella cheese on top. (Sea!) Salt & Pepper to taste!
This could be easily mixed together and cooked longer, but I like my pasta and sauce separate.
Now I know that some people are like eww veggies in sauce like that? I promise you you could bearly taste them as they took on the taste of the sauce and the tomatoes, Thats why I cooked it all together for a while so it would all meld together. The sauce is very strong. If you don't like olives you will NOT like this sauce. I however love them and really enjoyed this meal!

I want to try to work in more veggies, but this was easily made with stuff I had on hand in my pantry! I loved it, and it tastes just as good reheated!
