Turkey porn

Kevin brought home our beautiful, 17 lb Diemand's turkey last night, and since we're having a very small dinner on Thanksgiving, I've cut it up into parts and frozen most of them to be enjoyed later. I froze a bag of stock bits, and have simmered the rest this evening to make stock. A breast, now chilling in the back of the fridge, will be maple-brined and, weather permitting, grilled Thursday.

I'm already making plans for the precious, precious fat that is settling on top of the hot, strained liquid on the stove. Since the breast is so lean, I thought I'd just smear a coating of herbed turkey fat all over the meat before grilling it over hot coals.

Maybe I'll pin bacon over the fat.

Since I've gone and made all that stock ahead of time, I'll make some gravy. And just to make sure there is enough fat in the meal, because I'm still concerned about the leanness of turkey breast, I'm making kale gratin to go with it. Dessert is maple bourbon sweet potato pie.

I better go buy some more cream.
