Cake Fix
I admit it, I keep a box of chocolate cake mix in the pantry -- for those days when I really really want something sweet and my fruit stash just isn't cutting it. I use the cake mix to do a single serving cake that I bake in the microwave -- out come these rich dense moist cakes that are done in under 5 minutes and I don't have to worry about leftovers!
1/4 c Chocolate Cake Mix
pinch cayenne
pinch cinnamon
2 Tbsp fat-free yogurt
grease & sugar 1 ramekin. sugar gives the cake a pretty nice crust and makes releasing from the ramekin much easier;
in a small bowl, mix cake mix, cayenne and cinnamon well; then add yogurt and stir until nice and glossy;
pour into prepared ramekin & microwave for 1 minute (for molten) or 2 minutes (for set cake)
loosen cake with a butter knife and turn out on a plate. Enjoy! :)
