BACON COTTON CANDY    

Chef Linton Hopkins Holeman & Finch - Atlanta, Ga., USA Yield: 10 gal Isomalt200 g Glucose50 g Sucroester3 g Smoked bacon fat120 g Monodyglycerides3 g Granulated sugar200 g Candied baconas needed Instructions:1. Combine isomalt, glucose and sucroester and cook to 160 degrees C.2. As caramel is cooking, dissolve monodyglycerides into fat heated to 50 degrees C.3. When caramel temperature reaches 160 degrees C, drizzle in oil and stir to bind with a spatula. When caramel has absorbed fat, spread mixture out on a nonstick silicone mat. Allow to cool; it will become hard.4. Combine candy and sugar in a food processor and pulverize candy into a fine powder. Use powder in place of sugar to spin into cotton candy in a machine, using manufacturer's instructions. Wrap cotton candy around strip of candied bacon.
