Gingerbreads

140g softened and cubed butter
1/2 cup dark brown sugar
1/4 cup golden syrup
1 egg lightly beaten
2 cups plain flour
3 tspns ground ginger
2 tspns ground cinnamon
3/4 tspns ground cloves
3/4 tspns nutmeg
1 tspn bi-carb soda
pinch of pepper (optional)

beat butter and sugar until light and creamy, add golden syrup, then egg.
fold in flours, spices and bicarb soda. Turn out onto lightly floured surface, knead lightly.
cover with glad wrap and chill for 20 minutes.
Roll out and bake in an 180C oven for 10 minutes, but keep an eye on it, they burn quite quickly when they start to brown.
