This is really good on chicken or fish (some kind of white fish like catfish; I haven't tried it with salmon or tuna).
  • 1 tomato, chopped
  • spring onions (I used three; use more or less for preference)
  • 1-2 tablespoons of lemon or lime juice (to taste; I like a lot)
  • splash of dry white wine or cooking sherry
  • salt and pepper, to taste
  • oregano (fresh or dried; again, I like strong flavors so I use a lot)
  • basil (see above)
  • coriander seeds
It might also work with balsamic vinegar instead of lemon juice, but I haven't tried that yet.  You mix everything together, then pour it over whatever meat you're using (I've used chicken breast and catfish) in a baking dish and bake at about 400 until the meat is done (or with fish, about 20-25 minutes so the vegetables cook too).  I don't know if this is a recipe I've seen somewhere and adapted, or if I made it up, or what.  But it's good.  Even Justin eats it, and he doesn't really like tomatoes.  Serve over rice, or maybe couscous if you prefer.
