Usually, we choose an ethnic region or culture for our theme cooking nights, but as this was a last minute endeavor, and the day before, my sister and I had bought around 30lbs of assorted squash from the last farmer's market weekend, I decided the theme would be decided Iron Chef style: by ingredient.
So the night's theme: SQUASH.
I chose three recipes that I hoped would be a good balance: Country Fried Squash, Butternut and Acorn Squash Soup, and Spiced Butternut Squash Muffins.
