Well, that's not true, I had plenty planned. I ran 3.2 miles. Our cleaning person came. I cooked another meal I'd bought the ingredients for earlier this week. So I actually planned a lot, it just felt like I didn't because of the surprise holiday.
Around all that, I played a lot of AC:Odyssey. Whee. ;)
The husband was meh on dinner. I mean, he ate it, but it was clearly not his favorite thing. Chipotle braised pork with rice. I thought it was pretty damned good for a first time trying the recipe, especially after I had to substitute pork loin for the pork butt roast called for in the recipe. Whole thing was done in a dutch oven, starting with sautéing some peppers on the stovetop, blooming the spices, adding the liquids and the pork, then into the oven for an hour, then add brown rice, back into the oven for an hour. Pop some drained canned lentils in off-heat for five minutes, then mix in the finishing herbs and done. It sounds like a lot, but it really wasn't hard, just a lot of time in the oven.
Yesterday was also rice in the oven, along with poached chicken breasts and a warm tomato vinaigrette. Tomorrow is burgers, hopefully outside if the weather holds. Sunday is turkey sausage and fennel pasta. Monday will be italian sausages in the sous vide with homemade marinara and either rice or pasta, I haven't decided. Those are all dinners, lunch is usually leftovers, and I've been skipping breakfast of late, so I've had plenty of food to choose from for lunch.
