how to check eggs for freshness

i forget where i learned this. fill a mixing sized bowl with cool water. put the eggs in the water. if they sink, they're still okay. if they float, they aren't.

i've never cracked an egg that floated to make sure it was dead, but i've never tried to use an egg that sank, only to find it was no good.

it's counterintuitive that the ones that sink are the ones that are okay, but it has to do with air getting inside the shell of eggs that have had it and allowing the eggs to float.
