lol that was brainy and a very interesting question. i can't really answer it.
however, prosopagnoisia is a disorder in awake people who have problems recognizing people by face. they can figure out who it is by their voice, but the meaning behind the features of a face does not connect with a concept of who that person is. (i.e. if i had no vision problem and looked at you/your face and had no idea who you were). that was me being brainy :)
I personally have had a number of dreams where I meet interesting people who are almost completely identity-less. I know them, they have a name, they have histories, and I interact with them as if they were people, but I can't recall a single one of their faces nor a time when I could recall them.
Which is a similar point, I think, to the one you were making. Dreams are a composite of things we've already experienced, although how they're actually composed is of some debate. So, in effect, some part of our mind "chooses" the content of a dream. The question is, then: why doesn't my mind choose to assign faces to these people? Does that reflect on my facial recognition patterns when I'm awake?
Or, is it a memory thing? Perhaps they were assigned faces, but my mind forgets them? But if they were assigned faces at some point, I would think that there's a "record" of them somewhere in there, right? I mean, if I constructed it, why would I demolish it, and is that even possible?
Ah yes. Thank you JVS. You did a great job suming up all the extra thoughts going through my mind after the initial post. I now get a sense of closure on the question, but not yet the answer.
