I totally hear you on the debt thing. I've had to just STOP PUTTING THINGS ON MY CREDIT CARD, and even that has generally made a difference. It's hard to make large payments while I'm not making much money but little by little it's going away. ._. Good luck Beth! You can do it!
Crockpot things, besides that chicken? I loooove doing a roast in there, and it's absolutely the best on low for 8-9 hours. I throw in a beef roast with a dash of red wine, a dollop of bbq sauce (I like chipotle) and potatoes and diced onion and pepper (which Teddy can easily eat around since the main point is to absorb some flavour... they get kinda soggy and weird anyway so texturally they aren't awesome). LOTS of garlic is good too. And I think I gave you my pineapple chicken recipe? :X Chicken breasts slowcooked in apricot jelly and bbq sauce (if you pick a spicier sauce, it won't be as sweet, and you can sort of adjust the ratio of jelly to sauce to taste with respect to whether you want sweet chicken or spicy-ish chicken ... you only need maybe 5-6 tablespoons of each, tops). Do it on low for 6-7 hours, then drain the juice from a can of pineapple chunks and dump the chunks in for the last 20 min or so. This is going to sweeten the shit out of it, so don't make the sauce too sweet in the beginning. This is amazing over basmati rice. :D
And I've had this recipe bookmarked but haven't tried it yet, because I'm already so fond of my stovetop stroganoff recipe.
