Dinner with Berries

Tree made dinner tonight. Its not like I've never made dinner before but I wanted to comment on it. I made Fajitas (AJ acted as a lovely prep cook chopping up my onion and 2 red bell peppers for me) and spanish rice. Nothin fancy, I've made that a million times- though I still think adding sliced almonds into the spanish rice really enhances it. As a sidenote I tried pine nuts once since I didn't have the almonds- not a good idea!

What was a little special was I got a wild hair to make Blackberry Cobbler or a Blackberry Crisp or something. Its not that unusual since there is a big thorny blackberry bush outside my front door and its currently covered in plump, ripe, juicey... mmm.... berries that I took to picking the other night. I figured I could pick all season and freeze a TON of them to eat all year- but what could I really do with them? ... Well can I easily enough make a crips or cobbler to make picking and freezing worthwhile??? As it turns out... YES! I did a little fast research while I was watching Entourage on basic recipe structure and oven temperatures. The only downfall was that I think my addition of nutmeg was a bit to heavy handed- I think some is best but less would be better.

So fresh from the oven we had Blackberry Crips (personal size in lil ramekins) with the Honey Bee Vanilla ice cream, (which I reccomend cause it is not only good but because honey bees are crucially important!!!)
