I've been hungry since 10 am. I ate a kids 'zClif' bar. A temporary hold-me-over snack. We are absolutely out of food. The fridge is bare and empty looking. I've got a couple of tangerines, a grapefruit, half a jug of orange juice, milk for phil, a mysterious jar of artichokes, pepper paste (that stuff never goes bad, lol), ketchup, mustard, 1/2 loaf of ezekiel bread, leftover rice from last night, a container of fat free organic plain yogurt, and 3 eggs. Eggs, sounds good. I grabbed two. Time to raid the pantry.
Sesame seeds, white rice, dry black beans, canned black beans, quinoa, pasta, 2 cans of tuna, can of diced tomatoes. Black beans and last night's rice? Sounds pretty filling, but plain. Ohh but what about that lonely can of tomatoes...? Ah, yes. Black bean chili OVER rice... with two fried eggs on top? Sure!
We-Ain't-Got-Anything-Left-to-Eat-Black bean chili:
1 can black beans, drained and rinsed
1 can diced tomatoes
ground cumin
garlic powder
kosher salt
chili powder
Directions: dump all of the above into a pot. Simmer for 30 minutes with a lid on.
Meanwhile, fry two eggs sunny side up.
Put cold rice in the bottom of your bowl, because you're too lazy to heat it up. Pour hot black bean chili over it. Top with fried eggs.
Hmm... wish I had some sour cream. Oh wait!
*adds two mounds of yogurt to the top*
Ahhh...yes... Lunch is served. And surprisingly delicious!
We soooo need to go grocery shopping tomorrow. I would love to eat a fresh vegetable right about now.
I completed and sent out 13 July and August birthday cards with small gifts for people over at the
bday_packages community. Feels good to make people smile, especially complete strangers.
