So, I made hummus today. ^^ It's so yum, I was tempted to eat more than I needed to. >_> (do you ever just want to taste more of your food without actually swallowing/digesting it? Or am I just weird? lol)
Anyway, here's the recipe (as given to me by my mother, who got it from a lady she used to clean for):
Hummus
Ingredients Part One:
1/4 cup tahini
1/8 cup olive oil
3 tablespoons lemon juice
2 cloves garlic
water (amount depends on how thick or creamy you want the hummus, add in small increments)
Ingredients Part Two:
1 can drained garbanzo beans (chick peas)
1/4 teaspoon ground cumin
1/2 teaspoon ground coriander
2-3 stalks green onion
salt and pepper to taste
Preparation:
Mix first four ingredients separately. Then blend together ingredients from Part Two (ideally with a food processor or blender, because by hand will be a bitch) until smooth. Add Part One mixture, then water until desired thickness/creaminess is reached.
Enjoy with toasted pita, or as an alternative to condiments on a sandwich (my preferred way)!
lg's Tips:
* Though the recipe my mom gave me called for preparing the ingredients in these two parts, I did it differently. I blended the ingredients from part two in my processor, then added the garlic (minced, as I can't be assed to find good fresh garlic cloves around here), lemon juice, and olive oil.
* I used slightly less olive oil than called for, and an extra tablespoon of lemon juice.
* I couldn't find tahini anywhere, so I used natural peanut butter instead. I briefly considered making my own (sesame seeds + oil (olive, most likely) ground with mortar and pestle = tahini) but in the end I was too lazy. >_> Natural peanut butter is a pretty good replacement.
* Peanut butter and water (about 4 tablespoons) were added last, and I added a little more water after that.
** Tip for chopping green onions: don't use a knife and cutting board--use (clean) kitchen shears!
