Day 21 → A recipe
I am not a cook, this is well known. I tend to eat easy to prepare foods, one pot meals, and the like. I have a lot of issues with food because of the Celiac, I don't enjoy it unless I can be really sure it's safe. I have been eating a lot of Indian and Thai food lately because I'm on a spicy kick. I'm not really sure what's in it, but it's all mixed up with what I think might be tomato, but could be red because of the curry. I don't really know, but boy is it good!
So in light of that, I don't have a lot of recipes that I actually follow. The one recipe I used to use often is for Mug Cake. Alix gave it to me and I adapted it for Celiac folks. I've tried various brands of flour mixes and Pamela's is the best one, by far. You can add other things to change the flavour, I tried mint, coconut and white chocolate. All turned out awesome.
4 T. Pamela's Gluten Free Baking Mix
4 T. Sugar
3 T. Vegetable Oil
3 T. Milk
2 T. Chocolate Powder
1 Egg
Dash of Vanilla
Mix the dry ingredients. Add the egg and mix. Add the oil and milk and mix. Add the vanilla and mix. Microwave for four minutes. Let cool slightly. Eat!
