Real Dark Chocolate. The stuff that tells you the percentage of cacao in it. Here's my scale:
85% is as high as I can go. The bitterness at that point almost overwhelms me. This you grate over something very sweet as a counterpoint. Let one piece melt on your tongue before drinking your after dinner coffee. It's a deep rush of flavor to be savored.
74% is tiny bites that you let melt on your tongue and savor like a rich red wine. Very heady. A bit bitter. Goes well with a sweet accompaniment.
70% almost perfect balance. Let it melt slowly in your mouth. Don't hurry the experience. Sweet enough to eat as candy, but bitter enough to be adult.
60% Better than Hershey's Regular Special Dark. Not so sweet.
Special Dark -- Gobble it up and don't feel guilty that you aren't taking the time to savor each nuance of flavor. It's just candy.
