I consider the hobbies introduced in Freetime a big part of a Sim's personnality. I tend to stick to the predestined one because I'm lazy.
Most of the time a premade's one true hobby fits right in with the picture in my mind.

However there are several cases where one Sim could have two predestined hobbies (following the personnality traits) and the game picked the less appropriate one.
- Sandra Goth and her mother are both into tinkering, I changed it to to Science for both, I mean, they're Goths !.
- in Veronaville Tybalt Capp is into Music and Dance, while he could have been into Fitness. Which is true in my game by now.
- in Strangetown, Chloe Singles' hobby was Nature. While this was not completely unbelievable, I have way too many Sims with this hobby, so she gets her second choice: Games, which is quite fitting during her nights downtown.

Besides Nature I also get way too many Science and Arts and Crafts sims. But I want for each sim to enjoy their hobby their own way.

Science is the hardest because of its limitation, they're just all into stars. Some can legitimately say so, like the Curious brothers, while a few others take the more mystical approach of astrology, but most make my life miserable by choosing stargazing as a familial activity (the Capps or the Grunts). I can get revenge by deciding to stick them in front of the Weather Channel (like Denise Jacquet)

Nature is probably the easiest hobby because of the many ways to enjoy it: ornithology, entomology (the male Goths' favorite activity), fishing, gardening, hiking or simply being a hippy (Lazlo Curious, Florence Delarosa, Erin Beaker, I'm looking at you). Ecology as a whole could fit in there, and mineralogy kind of.

Arts and Crafts is interesting because the different activities are, well, so different. Mary-Sue Pleasant enjoys pottery, Brenda Broke is good at sewing, Gilbert Jacquet loves photography. There's also painting, drafting, flower arranging, or plainly looking at art.

One last example would be Nina Caliente, a real sport aficionada -and Daniel Pleasant's fan- and Nervous Subject, who just likes to run after a ball (I turned him into a werewolf because he needed more personality points, it changes the way I see him).

I may put too much thought into it, but that's the way I enjoy my Simming hobby.
