Nutrition Question: I go to work with these things: 1 apple, 1 orange, Peanut Butter, 1 serving of low-cal yogurt (80 calories) 2 diet Sprites (0 carbs, 0 calories, 0 caffeine) and optional 1 banana.  At my first break, I take ta Diet SPrite and either the apple, core and slice it (love my apple corer/slicer!) and add peanut butter to each slice; ( Read more... )

Diet Sprite is delicious and don't deprive yourself of it, as long as you are drinking your water. The yogurt is a good start but perhaps something also fat free? One thing you will need to be cautious of is sugar. Fruit has sugar, though natural sugars and peanut butter has a lot of sugar and carbs, so maybe consider the sugar content when selecting peanut butter. Apple skin has fiber so if you eat that, it helps. Oranges and bananas both have benefits so you are good there. I agree that you might need some more protein in your diet. Have you considered Greek yogurt? That adds more protein without really changing what you eat.

I am also a big proponent of quinoa salads. Quinoa is a perfect protein and you can add yummy cranberries and nuts or add veggies to it. I also found on a vegan blog a recipe for vegan quinoa salad with black beans (high in folate, dietary fiber and manganese) and sweet potato (high in beta carotene and vitamin C, both anti-oxidants). Not saying you need to change what you are eating but you can make a batch of that at the beginning of the week, divide it up and take it for your lunch for some variety.
