Serves 2
2 Breasts Chicken or 4 Chicken Thighs
1 Medium Tomato, chopped
Olive Oil
2 T Basil
2 T Parsley
1/4 C Grated Parmesan Cheese
1/2 C. Mozz Cheese
1/2 t Salt
1/2 t Pepper
1/4 C Worcestershire Sauce
1/4 t Hot Sauce
1 Can Tomato Paste
1 Clove Garlic
1 Quart Baby Bella Mushrooms,sliced
1/2 Onion, chopped
1. Fill small pot with 1/4 in. olive oil, garlic, and onion over medium heat.
2. Saute chicken in oil until cooked through.
3. Turn heat down to low and add tomato and tomato paste. Stir.
4. Simmer for 1 hour.
5. Add Mozz.
6. Simmer until cheese melted and distributed through out, stiring occasionally.
7. Serve with grated cheese on the side to sprinkle on top.

Adaptations: This recipe would also work well with steak. Mushrooms, onion, and hot sauce can be removed. A 1/2 C. red wine would make it sweeter.
