Okay, so, tomorrow is the last day for the pastor of the church my family and I attend. Every month with a 5th Sunday, we have a potluck lunch. My family very, very rarely goes, but tomorrow, we're going. The catch, as it's a potluck, is that you have to bring an entree and either a salad or dessert. I'm taking care of the entree.
I will make a note on this. The taco bake that makes the biggest hit with everyone is the taco bake made with ingredients from Aldi. Yes. Aldi Discount Grocery store. And I know for some of you international friendz there are some (not called Aldi, of course) in some other countries. I actually went to one in Austria. *chuckles*
Ingredients:
1 regular sized can of condensed tomato soup
1 cup milk
1lb or a little more ground beef
24 oz salsa (I generally make it with medium)
3 cups Mexican cheese (divided in half)
1 package (generally 8) flour tortillas
Directions:
Brown ground beef. That's simple enough! While that's a'cookin', get out your tortillas. Stack them nicely on a cutting board, and slice them into one inch strips, and then cut those strips into small, bite size (1/2 inch to 1 inch pieces). Put those in a bowl. Also easy.
After that, pour in the condensed tomato soup and salsa, mixing that together. Then add your cup of milk. It'll look a little soupy, but that's okay. Next, mix in 1 1/2 cups of the shredded Mexican cheese. After your meat is browned and drained, mix that in too. The meat and cheese will soak up the extra liquid.
Bake at 400 degrees, COVERED, for a half hour or so, until the top is bubbly. Add the rest of your cheese to the top, put it back in UNCOVERED for about 5 or so minutes to melt the cheese, and bam, done.
ALTERNATELY
You can also crockpot this recipe, adding everything to your crock pot (save the "top" cheese until you're about ready to serve it) and cooking overnight.
