And I think it turned out pretty well. :)
CostCo carries frozen Norwegian mackerel fillets, which while not entirely boneless, are quite easy to eat and prepare. All I had to do was defrost the fish, pat them dry with paper towels, and heat up my cast iron griddle (seen in background, covered with the salt I use to clean it after use). Maybe takes 2 minutes per side? I remove them from heat once the internal temperature reaches 120F, though a bit higher won't hurt. I use shortening, but a small amount of any oil will work, too. The griddle is well-seasoned so stuff doesn't really stick anymore.
This is an experiment I tried with a berry streusel recipe originally from Alton Brown. I modified it to use peaches I picked up from the local fruit stand this morning. Tree-ripe (albeit bruised) peaches for 50cents a basket? Yes please! I added some ground ginger as I've always liked how peaches and ginger taste together. Had to bake a little longer than usual, as the peaches don't appear to gel quite like berries do, but quite delicious.
