I'm thinking of trying my hand at a kosher choucroute garnie, an Alsatian dish of sauerkraut slow-cooked with wine, herbs, and meat. It's msot often made with cured pork and pork sausages; I would look to be using beef, veal, and turkey. If I gould find a nice garlicky beef sausage, a pale-colored veal sausage, and smoked turkey, I think those would be perfect. But the world of kosher meat being what it is, I don't know how much choice I'll have... can anyone recommend a brand of kosher sausage or smoked meat they have especially liked? Something I can order online would be ideal, since I may not be able to find it locally (Palo Alto, CA). Thanks for any info!
