Lunches

I am behind on lunches. It's hard to get into the habit of doing something that you are unaccustomed to doing, but I'm trying.

August 9, 2008 Lunch




Description and method: This was a very hastily gathered lunch. A bunch of grapes, a handful of baby carrots, a babybel, and a nectarine. I ate some of the grapes and a few of the carrots and the piece of cheese. For some reason that was all I got to this day. It's pretty common for me to not eat all of my lunch, even when it consists of sad sad things in the first place.

August 10, 2008 Lunch


Description and method: When I make pizza I tend to make either three eight inch pizzas or two slightly larger pizzas. For some reason I really like eating slices from different types of pizza. It just makes me happy. I took two slices of pizza with me for lunch, and ate the rest of my carrots (I think there were four of them) and the few remaining grapes. The nectarine stayed in the fridge.

Pizza 1: Ham, salami, pepperoni, and green pepper
Pizza 2: Salami, bacon, olives, and feta
Pizza 3: Turkey breast, pepperoni, bacon, and mushrooms.

My favourite part is the crusty cheesy bits on the edge of the crust. I always do that on purpose.

Pizza Dough

2.5 C flour
1 tsp salt
2 TBS sugar
1 packet instant yeast
1 C water
2 TBS olive oil

Since the yeast is instant active yeast I mix my flour, salt, sugar, and the yeast. Then I add the cup of water and olive oil and let the kitchen aid knead the dough for about ten minutes. Since I have made this recipe so many times in my life I never measure anything. I will add more flour or water as needed.
After ten minutes I spend about two minutes kneading the dough by hand, then let it rise in an oiled and covered bowl for a half hour (or more, I have left it a lonnnnnggg time on the counter many times!). Then I divide my dough into the same number of balls as pizzas I am going to make and let them rise covered for another half hour.

Bake at 425 for 15 - 20 mins. I find it depends on what pans I use.

Description and method: McDonalds! I used to get McDonalds on Thursday nights after work because it was easy, cheap, and on the way home. Usually after I finished eating I would still feel hungry and would just be unsatisfied with my meal. I went into the salon this day to get a hair cut (my day off) by one of my coworkers and ended up hanging out at the salon for three hours. It was after two when I got out of there, so I stopped and picked up a double cheeseburger and fries. For some reason this was perfect for me. I wonder why it was satisfying as an easy lunch, but never did it for me for dinner?

August 12, 2008 Lunch


Description and method: This was leftover from the night before. I made two grilled cheeses and a can of Campbell’s veggie soup -- the kind with the alphabet noodles. For some reason I really wasn't very hungry that night and ended up eating one sandwich and a small bowl of soup. I love cold grilled cheeses and actually ate them for my lunches from grade 2 - 10 (when I stopped bringing a lunch to school). The grilled cheese had salami, cheddar, and mozzarella on it. A very nice lunch!

August 13, 2008 Lunch


Description and method: This lunch is leftover baked spaghetti. I ate this both August 13th and August 14th for lunch. I don't usually enjoy normal spaghetti but for some reason basked spaghetti really appeals to me. I make a rose sauce using my home made spaghetti sauce from the freezer. I toss in some ground beef and the cooked spaghetti noodles then bake it at 375'F for forty-five minutes to an hour with some cheese sprinkled on top. It reheats beautifully.

August 15, 2008 Lunch


Description and method: Two pieces of cheese and two nectarines. Ok, this lunch was really sad. What's even worse was that I only ate the two pieces of cheese for lunch. Which brings me to the next lunch..

August 16, 2008 Lunch

Description and method: A nectarine. Can we tell that it's getting to be near the end of my work week and that I need to go grocery shopping or something? Ahk.
