couple short ribs
handful of bacon (maybe 6 pieces)
1/2 to 1 onion, rough chopped
2-3 cloves garlic, chopped
mushrooms - 1 standard size package sliced
5-6 carrots, cut into pieces
1 1/2 tsp thyme
2-3 tbs tomato paste
2-3 tbs flour
salt
pepper
2c beef stock
1c red wine
Cut the bacon into pieces, fry in dutch oven until plenty of fat is rendered
Brown the short ribs on all sides
Toss in the onions, cook until translucent, about 5 minutes
Add flour and tomato paste, cook 5ish minutes
Add mushrooms, cook a few more minutes until they start to look wet
Add thyme and carrots, beef stock and wine, salt and pepper to taste
Make sure the short ribs are at least 2/3 covered by stock/wine, if not add more in the same 2:1 proportion
Cook a few hours on low, until meat is tender
If the juices haven't formed a loose sort of sauce/gravy, you can add about a tsp of cornstarch to thicken - dissolve in in a tablespoon of wine first so that is doesn't form a lump when it hits the hot juices, stir in and wait a minute for it to do its magic
