Rib-Eye steak last night: sear, two minutes per side, remove from heat, put steak on plate, let pan cool a little. Add 1 Tbsp butter, a shallot, a clove of pressed garlic to pan, swirl around, add 2 Tbsp soy sauce, 2 Tbsp orange juice, throw meat and pan juices back in, cook til meat's done, flipping occasionally.
