Rib-Eye steak last night: sear, two minutes per side, remove from heat, put steak on plate, let pan cool a little. Add 1 Tbsp butter, a shallot, a clove of pressed garlic to pan, swirl around, add 2 Tbsp soy sauce, 2 Tbsp orange juice, throw meat and pan juices back in, cook til meat's done, flipping occasionally. i love macbook air too, but olaugh derided it, saying it would be our fourth fastest computer.

my steaks don't tend to turn out well, but i'll try your recipe. i guess i'll have lots of opportunities to practice soon.

steaks go over best for me with the aid of the thermometer, and being patient enough to let them rest for 6ish minutes. without that, i'm pretty bad at making them, too.

I love the Mark Bittman vegetarian cookbook, too. The pineapple fried rice recipe was really good.
