Didi read the recipe one last time, before attempting to make the dough. He wanted to make the perfect apfelstrudel from the half dozen apples left from the peck they took home from apple picking. He had already made a couple of pies as well as an apple cake, not mention the ones that were simply eaten, This would be a challenge to his skills as the dough had to be stretched paper thin without tearing. Although, some cookbooks claimed tearing was okay, others claimed it was not and of the ones okay with it, about half suggested leaving the holes alone as no one would see them when he rolled the strudel up.
While the dough was resting, Didi cut up the apples and placed them in a bowl with a bit lemon juice to keep them from browning. He also made a thin creamy mixture from milk, sour cream, a bit of a vanilla and sugar. Setting it aside, Didi then drained the raisins he had soaking in water and added them to the apples. Some more sugar and some cinnamon were added and then mixed in.
When the dough was ready, Didi sprinkled flour all over the special tablecloth he bought specially for strudel making. Freshly laundered and dark colored so that it would be easy to see if the dough was stretched thin enough when the time came to stretch it. Taking the dough, he placed it in the middle and rolled it out into a rectangle. Setting his rolling pin to the side, Didi lifted a corner of the dough, and placing his fist underneath, he held it up so that he could stick his other hand under it. From there, he began the slow process of pulling the dough until it was paper thin. By the time it reached the proper thickness, the dough cover the top of the table. Now he was ready for the filling.
Using a pastry brush, Didi brushed the creamy mixture all over the dough, before spooning the apples and raisins on it in a line roughly down the middle. Taking the table cloth in hand, Didi used it to help him lift and roll the dough. The end result was a long apple filled tube of pastry. Didi cut it in three, and with the help of some parchment paper, he was able to put each on in a pan he greased with butter. Didi cut a few holes in top, before popping the strudels in the oven.
While the strudels were baking, he cleaned up his mess in the kitchen and made a pot of coffee. Didi could not wait to taste a piece. He puttered around the house, tidying things up, which he knew his father would like and his brother would thank him for. Didi returned to the kitchen just as the timer went off. He took the strudels out of the over and put the pans on top of the stove to cool. By the time his father returned with his brother, the strudel was ready to share and they sat there, enjoying the tasty treat.
