chard cheese bake

Adapted from the Simply in Season cookbook.

1 lb swiss chard
1 tsp salt
4 eggs
1 cup milk
3/4 cup parmesan cheese
1/2 cup swiss or italian blend shredded cheese
3 cloves of garlic, minced
1/2 cup green onion, diced (optional)
1 cup cooked rice
2 TSP melted butter

Preheat the oven to 375.

Prepare chard: Cut the red stems off the chard. Separate stems from leaves. Slice the leaves into strips and put leaves into a bowl. Fill a medium saucepan with water and add salt to water. Place the stems in the water and bring the water to a boil. When the water is boiling, add the leaves and let cook for 5 minutes. Remove from heat and drain.

While the chard is cooking, saute the garlic in a small amount of olive oil.

Combine milk, eggs, parmesan, garlic, onion, and cooked chard in a bowl.

Place cooked rice on the bottom of a lightly greased baking dish. Pour melted butter on top of the rice.

Mix milk/egg/chard mix with the rice in the baking dish. Sprinkle mixed shredded cheese on top.

Bake for 30 minutes.
